Tomato Basil Soup

My Mom has made this soup for the past several months. The girls & I have fallen in love with it. After looking at the recipe, I decided to lighten it up. So here is my version. Personally, I don’t think you can tell any difference and my version has a lot less fat.

Tomato Basil Soup

1 t. minced garlic

1/2 c. chopped onion

1/2 c. chopped celery

1 T. olive oil

1 heaping T. dried basil

14.5 oz can petite diced tomatoes

four 10.75 oz. condensed tomato soup (I found that Target brand has no fat per serving. This is the soup that I used to figure the nutritional information)

4 c. skim milk

Saute garlic, onion & celery in oil. Cook until cooked through. Add basil & petite diced tomatoes. Take off heat. Puree this mixture in a blender. I divided mine in to two batches so that there wasn’t too much. Puree until smooth. Add pureed mixture to crockpot or large stockpot. Add tomato soup & skim milk. Heat until hot. I simmered mine in the crockpot for several hours until we were ready for dinner.

Makes approx 10 cups.

1 cup serving: 150 calories, 1.4 grams fat, 1.5 grams fiber

1 1/2 cup serving: 224 calories, 2.1 grams fat, 2.3 grams fiber

I had this again for lunch today. It is great on a cold day. Sydney asked for this soup when she had the stomach flu. LOL. Both girls had two bowls last night for dinner. Can’t beat that. Chris (who despises tomato soup from a can) said that it “wasn’t bad” which I thought was a good response considering. :-)

That is steam coming from the soup in the picture. I like my soup hot. ;-)
