Hot Yummy Chili

It has been so cold in this area that soup just sounded so good. Yesterday morning before heading to church, I made my chili and put it in the crockpot so it would be ready for us when we got home. This is the first time that I have taken the time to figure out the actual recipe. Every time I make this, I just throw it together and don’t really measure. Since my journal is out in full force, I wanted to know exactly how many points/calories were in each serving. It was even better than I thought.
Chili
1 lb 95% lean ground beef
1/2 c. chopped onion
4 oz can mushroom pieces
two 14.5 oz can diced tomatoes, chili ready
two 14.5 oz can chili beans (I use one medium & one mild can)
11.5 oz can tomato juice
1/2 c. water
1 1/2 t. chili powder (or less depending on your taste)
1 t. cumin
1/2 t. black pepper
1/2 t. salt
In a skillet, brown ground beef & chopped onion. Drain off any fat once cooked through. Add to crockpot or stockpot. Add in drained mushrooms, diced tomatoes, chili beans, tomato juice, & spices. Then take the 1/2 cup water and “rinse” out the chili cans to make sure you get the remaining seasonings out of the can.
Let simmer in crockpot or stockpot for several hours.
Serving size 1 1/2 cup: 283 calories, 4.6 grams fat, 9 grams fiber
Note: I normally don’t add mushrooms. For some reason there was a can of mushrooms in my pantry. I remember my Grandma Wenger putting mushrooms in her chili when I was younger. So I decided to throw them in. Megan ate them and didn’t bat an eye. She told me that they tasted good. Sydney threw a little more stink. Chris loved them. You could also add in chopped green peppers. I am just not a fan of green peppers in my chili but they wouldn’t add any significant amount of calories.
If you do not care for spicy foods, I would start with only 1 teaspoon of chili powder and see if it is spicy enough for you. The 1 1/2 teaspoons was quite a bit. Sydney noticed that it was spicier than normal but Megan was fine with it.
This soup freezes and reheats well.

Kristen, when I saw the canned mushrooms in your recipe, I immediately thought of Grandma Wenger. I will have to admit I was not a big fan of the mushrooms but they grew on me after I ate her chili a few times. Of course, she always had Zesta Saltines too. Good memories.
