Popcorn Chicken

My Mom saw a recipe that she thought I would enjoy. Of course, I couldn’t leave it alone and had to doctor it up to be more me. I have made this popcorn chicken four times now. My family LOVES it. Yeah. Can’t beat a meal that the girls loves.
2 egg whites or 1/2 cup Eggbeaters
2 T. yellow mustard
1/2 t. salt
1/4 t. chili powder
1/2 t. garlic powder
2 cup Panko bread crumbs (Japanese style bread crumbs)
1 1/2 pound boneless skinless chicken breast
Preheat over to 450 degrees. Cut chicken in to one-inch pieces. Combine mustard, egg whites, salt, garlic powder & chili powder. Mix well. Add in chicken pieces. Marinate in refrigerator for 1 hour (or more). Place Panko in pie dish or other dish with side. Spray cookie sheet with baking spray. (I actually put foil on my cookie sheet and then spray the foil.)
Remove chicken pieces from egg mixture and coat with Panko. I find it easiest to keep one hand in the chicken with egg mixture and one hand in the chicken with Panko. It keep my hands from getting any messier than they need to be. As you coat the chicken pieces with Panko, place on a cookie sheet. Do not crowd the chicken. Once all chicken is covered in Panko, lightly mist chicken with cooking/baking spray.
Bake for 15 minutes. Flip to other side. Mist again with baking spray. Cook and additional 6-10 minutes or until chicken is cooked through. Serve immediately.
8 servings. It depends on how you cut the chicken on how many pieces will be in each serving.
Nutritional information: 142 calories/ 1 gram fat/ 0 fiber.
Note: Panko is a Japanese style breadcrumb. It reminds me more of cracker crumbs that bread crumbs. I found mine at Meijer in the ethnic section. They are in a black bag on the bottom shelf.

Sounds delicious! I think I will try it on Todd, whenever we get back to cooking at home. I wonder if regular seasoned breadcrumbs will work…

Regular breadcrumbs would work but the texture & nutritional information would be different. These have a different texture. More like cracker crumbs. Much lighter in texture.

Tried your Popcorn Chicken recipe tonight and it was great! My husband gave it a definite thumbs up and we will definitely be making it again. Thanks for the recipe.
