Asian Chicken Lettuce Wraps

This recipe has been floating around in my head for sometime. I finally had a chance to make it earlier this week. I was so happy with the results. Chris really liked it and Megan, surprisingly, really enjoyed it. Megan ate so many that I ran out of lettuce leaves that were big enough to wrap anything in. LOL.

Asian Chicken Lettuce Wraps

12 ounces of cooked, finely chopped chicken

8 oz can sliced water chestnuts, drained and chopped

1/2 cup Kraft Asian Toasted Sesame Low Fat Salad dressing

Washed & dried lettuce leaves

LaChoy Rice Noodles (these are the ones in a can)

Reduced Sodium Soy Sauce, optional

Combine cooked chicken, water chestnuts and salad dressing. Heat until warmed. Place 1/2 cup mixture on top of lettuce leave and top with 1 tablespoon of rice noodles. Roll up the lettuce leaf like you would a soft taco. Enjoy!

My disclaimer!!!!! Read carefully. I have a sick child again. I was woke up THREE times in the night. I am soooo tired and a little overwhelmed with life. (But who isn’t, right?) I have refigured the nutritional value for this recipe twice now. It is much lower in calories than I was expecting. So, if you make this recipe, you should double check the nutritional information especially on this recipe. You should really check every recipe you get from any source. :-)

8 servings total: 1 serving of 1/2 cup chicken mixture: 97 calories, 2 grams fat, .75 grams fiber.

I will be making this again. I think next time I will add another 4 ounces of the water chestnuts. I think it could use some more crunch. Yummy dinner!
