Pizza Soup

Sorry for the delay in getting this recipe posted. I have made two different versions of this soup. I am going to post the version that I think is the best.
Pizza Soup
1 small can tomato paste
2 cans diced tomatoes with basil, garlic & oregano
1 can Great Northern Beans, drained & rinsed
1 can light red kidney beans, drained & rinsed
1 small onion chopped
1/3 cup chopped green peppers
2 cups water
1 pound extra lean (95%) ground beef, browned & drained
1 box frozen LIGHT Texas Toast, optional
2% mozzarella cheese
Combine all ingredients in crockpot and cook on low for four hours. Bake Texas Toast according to directions.
Ladle 1 cup of soup in to a bowl and top with 1/2 slice of Texas toast. Sprinkle with 2 tablespoons of mozzarella cheese.
9 servings total: I serving: 242 calories, 3 grams fat, 5.6 grams fiber this does NOT include 1/2 slice of Texas toast or cheese.
Note: The light Texas Toast that I purchased has 65 calories, 2.25 grams fat & .5 grams fiber for 1/2 slice.
The original recipe called for one pound of any meat of your choice. The second time I made this, I threw in some turkey pepperoni along with the hamburger. Sausage is also tasty.
My girls inhale this soup. Sydney actually asked for this soup again last night for supper.

Kristen, this sounds so good…what size cans of diced tomatoes?

Just the “regular” size. 14.5 ounces, I believe
