Cornbread Mix

If you have been a reader of my blog for very long, you know that I am a fan of Krusteaz baking mixes. So I was happy to finally see they had a fat free cornbread mix. I love making cornbread muffins when we have soup. Last weekend, I made vegetable soup and pulled this box to make the muffins. You can’t have anything easier than “just add water”.
The verdict: They are ok. Not bad but not out of this world good. But what can you expect with a box mix and “just add water”. I might buy them again but doctor them up. My family liked them and a friend thought they were good. So I would suggest you try them out.
The box made 12 regular size muffins. Nutritional information for one muffin: 120 calories, 0 grams fat, 1 gram fiber.
I found this at Walmart in the baking isle.

I am also a big fan of Krusteaz box mixes. Have you ever tried their Fat Free Brownie mix? You just add water to those also. I think they are fabulous! I’m not sure on the points, though. And sometimes they are hard to find.

Someone told me they added some drained rotel to the mix to spice it up and they loved it. I have not tried it yet though.
