Roasted Garlic Pork Tenderloin

I had a pork tenderloin in the freezer and decided to pull it out and see what I could come up with. I am tickled with the results. It was so delicious. I love getting experiments right on the first try. The house smelled delicious while it was baking. My friend, Tammy, was over when it came out of the oven. Tammy thought it was great too and was asking for the recipe.
Roasted Garlic Pork Tenderloin
1 pound pork tenderloin, trimmed of any visible fat.
2 garlic cloves, minced
2 teaspoons brown sugar
4 tablespoons low-sodium soy sauce
1 teaspoon red pepper flakes
In a reseable bag, combine all ingredients including the tenderloin. Make sure the tenderloin is completely covered in marinade. Place in refrigerator at least 2 hours. Preheat the oven to 425 degrees. Spray a baking dish with baking spray and place the tenderloin in the dish. Bake for 35 minutes or until tenderloin is completely cooked through. Let the tenderloin set for 5 minutes before slicing. After slicing, baste the pieces in the pan drippings. The drippings are a great spicy, garlic, caramelized goodness. Serve immediately.
This is one of my favorite new recipes. It was so good. I could have kept eating more than I should have. I hated to send the leftovers with Chris for his lunch. But I wanted his opinion and he wasn’t home last night.
