Salsa Rice

After making the Zesty Spanish Rice from the new line of sides from Weight Watchers, I decided to dress up this side. When Chris & I were newlyweds, Lipton had a rice packet that we ate a lot. Of course, Lipton had to discontinue it. When I saw this new side from Weight Watchers, the wheels started turning in my head. Last night, we were having Mexican. I made the Shredded Taco Chicken. I figured I would try my idea to see how it turned out. This is what I came up with.
Salsa Rice
1 box Weight Watchers’ Zesty Spanish Rice box mix
1 3/4 cup water
14.5 ounce can diced tomatoes, undrained
1/2 cup black beans, drained & rinsed
1/2 cup canned corn, drained
Bring water & diced tomatoes to a boil. Add in Zesty Spanish Rice and seasoning packet, corn & black beans. Simmer on low, covered, for 5 minutes. Stir. Remove from the heat. Let set covered for five minutes. Serve
Servings: 4 one cup servings OR 8 half cup servings
Nutritional information for 1 cup: 166 calories, 1 gram fat, 6 grams fiber
Nutritional information for 1/2 cup: 83 calories, 0.5 gram fat, 3 grams fiber
You can see that 1/2 cup is a “better bang for your buck”.
Verdict: I loved it. My sister, Kerri, was here and she really liked it. Sydney ate a little and it wasn’t too spicy for her. It still has some heat. Chris liked it too. I will be making this alot. I loved it!
