Asian Slaw

This is a recipe that I had posted over a year ago. When I pulled points, this is one of the recipes that lost its nutritional information. Last week, my sister, Kerri came over for supper. I gave her the options to pick what she wanted me to make for supper. My Asian Slaw is what she picked. I have a picture to post. But everytime I try to load the picture, my computer dies. My computer has died twice so I am going to wait. Hopefully I can get it posted once my computer problems are over.
Asian Slaw
1 package shredded cabbage & carrots (1 pound)
1 package oriental flavor Ramen noodles
2 T canola oil
1/2 c. water
1/4 c sliced green onions
1/4 c. Splenda
2 T apple cider vinegar
Mix oil, water, cider, seasoning packet from noodle mix & vinegar. Toss with onions & slaw mix. Refrigerate for an hour or until cold. (I forgot how important it was to chill this before serving. Sorry Charlie & Christy that your salad wasn’t cold.) When ready to serve, break up Ramen noodles and toss with salad.
Serves 8: 1 cup per serving. Nutritional information 63 calories, 5.25 grams fat, 1.5 grams fiber.
My girls loved this salad. We actually ran out of salad because they each had two helpings and were asking for more. I will be making this again. You will never know that my version has so much less oil than the original recipes that are floating around.

Kristen…Thanks so much for posting the Asian Salad recipe… I love cabbage. Do you think you could add some slivered almonds also? I’m sure you would have to adjust the calories/points.

Yes, you could easily add the almonds. Just make sure you adjust your points especially since almonds aren’t very point friendly.
I am sure the almonds would add a nice flavor.

Hey Kristen,
My family loves this salad too. Every time we have a family get together someone either ask me or my sister to make this salad. I need to try making it with the cabbage/carrot mixture, we usually make ours with the broccoli slaw mix.
