Breakfast Vegetable Pie

I mentioned that on Labor Day I attempted a brand new recipe. It was OK but was missing something. So I set out to remake it and get it right. My idea was to make a healthy breakfast option that was easy and still tasty. I love pie so that is the direction that I went. I wanted a quiche but didn’t want to have something fatty. I had the idea to use shredded hash browns for the “crust”.

Breakfast Vegetable Pie

3 cups frozen shredded hashbrown potatoes, thawed

1/2 cup chopped onion (I used a red onion)

1 1/2 cup liquid egg substitute (Eggbeaters)

1 cup shredded zucchini

1/3 cup chopped mushrooms

1/2 cup shredded 2% cheddar cheese

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon garlic powder

1 teaspoon original Mrs Dash

baking spray
Preheat oven to 375 degrees.  Spray a 9-inch pie plate with baking spray. In the bottom of the pie plate, press the shredded hash browns in to a crust form. Sprinkle the top of the hash browns with Mrs Dash seasoning. In a separate bowl, combine remaining ingredients. Pour the egg vegetable mixture over “crust”. Bake for 35 minutes or until knife comes out clean of the center.

Serve immediately.

I knew that the nutritional stats on this would be good but I didn’t realize how good.

1/8 of pie: 76.38 calories, 1.26 grams fat, 1.08 grams fiber

1/6 of pie: 101.83 calories, 1.68 grams fat, 1.43 grams fiber

1/4 of pie: 152.75 calories, 2.53 grams fat, 2.15 grams fiber

The picture of the pie is only 1/8 of a piece. I know in the future, I will be eating 1/4 of the pie. Chris really liked this. (He agreed that the first version wasn’t as good as it could have been). I knew when he had a second helping that I had a winner especially since Chris normally doesn’t eat breakfast.  After Chris was done eating this, I asked him what I should call it. He said “Breakfast Pie”.

Note: I got out my hash browns the night before. I put them in a covered bowl in the refrigerator so they were thawed the next morning.

    Wow, can’t wait to try this one. I even printed it out for the cookbook I am putting together of my favorites. I also printed out
    a copy for my sister in FL. Thanks for all your wonderful creations.

    Glad that everyone likes this idea. It really is tasty. The seasonings are a must to help the flavor. I thought the NI was awesome. :-)

    I really enjoy your website and this recipe looks good but as someone living in England I have never heard of Mrs Dash – original or otherwise! Can you tell me what it is please so I can try to find something similar here?

    Jane-Mrs Dash is a salt-free seasoning blend. It has a secret “recipe” of seasonings. I would say if you added some garlic powder, black pepper, onion powder, basil, parsley, and some cumin, you should be good. Or just some of your favorite spices would do.
