Spinach Salad

This is a salad that is a family favorite of ours. I grew up on this salad. I am sure that many of you have had this salad before. It brings back a lot of good memories from my childhood & my Mom making this salad. If you have never had this salad before, I am sure it sounds very strange. But just try it. It is an explosion of flavors and a wild mix of textures. The sweetness of the oranges, the nutty flavor of the almonds, the tangy dressing & the kick of the red onion make a wonderful combination that is tasty.
I am going to post two recipes. The first recipe is for an individual serving. The second is for a huge salad that you could take to a carry-in. For the second recipe, I do not have nutritional values. Since the spinach is so light & the other ingredients are heavier, the heavier ingredients tend to sink to the bottom of the bowl. I think it is very hard to get an accurate serving out of the huge salad. I hope my reasoning makes sense.
Spinach Salad
1 1/2 packed cup, baby spinach, wasted & dried
1 tablespoon almonds, toasted
1/3 cup mandarin oranges (in light syrup) drained
2 tablespoons chopped red onion
2 tablespoons Kraft Light Zesty Italian Salad dressing.
Mix all ingredients & serve. Nutritional information for entire single salad is 125 calories, 4.4 grams fat, 2.6 grams fiber.
Now, if you want to make a salad for a large crowd
1 bag baby spinach, washed & dried
1 red onion, chopped
2.5 ounces sliced almonds, toasted
1 large can mandarin oranges in light syrup, drained
Kraft Light Italian Salad dressing
I never have measured how much salad dressing for the entire salad. You want to be careful not to over-dress this salad. There are a lot of flavors going on in this salad.
