Mexican Pork Chops

Last night I decided to get very creative. I don’t know if I have been this creative in a long time if ever. I had no inspiration or starting point. I just started throwing spices together. I was very happy with the results. I hate to say that I forgot to snap a picture before we ate these yummy chops. I am sure you know what a pork chop looks like so it wouldn’t have been anything that special anyway. LOL.

Mexican Pork Chops

4- four ounce pork loin center cut chops with bone, lean, all fat removed

1/2 cup lime juice

1 1/2 teaspoon finely minced garlic

1 teaspoon cumin

2 teaspoons chili powder

2 teaspoons onion powder

3/4  teaspoon salt

In a resealable bag combine pork chops, minced garlic & lime juice. Make sure to coat chops with lime juice & garlic. Refrigerate one hour. Remove chops from refrigerator and let stand on counter for 15 minutes. Combine cumin, chili powder, onion powder & salt. Remove chops from bag. Rub chops on both sides with spice mixture.

Grill over medium heat until cooked through.

Serving size: one pork chop

Nutritional information: 229 calories, 9.2 grams fat, 0 grams fiber.

You can use any type of pork chops. Just refigure nutritional information based on the pork chops selected.

Note: You do not have to use the entire amount of dry rub. Just use what you need to get the pork chops covered well.

    Because I have had bariatric surgery to lose my weight, I need protein information on recepies in order to be sure I am getting enough protein in my diet.

    I fixed the mexican pork chops this evening. They were very good and my husband Steve said he would like one for lunch at work tomorrow. I will make them at least twice a month.
    I also fixed roasted new potoatoes, and squash on the grill.
    Very tasty and very healthy with olive oil and pepper you can’t go wrong. Steve asked do you remember what we used to eat before you joined WW? I sure do but that was my past life I responded (with a smile).
