Caramel Peanut Butter Apple Delight
Filed under Desserts,Snacks by kristen at 5:45 pm on Aug 24 2008
The name of this is more complicated than the recipe! I couldn’t come up with a better name. I love apples. I love peanut butter. I love apples & peanut butter together. Since joining Weight Watchers, I hate to spend points on peanut butter. I have come to love PB2. It is a great alternative when you need a peanut butter fix.
1 medium apple (I prefer Fuji or Honey Honey Crisp
1 tablespoon DaVinci Sugar Free Caramel Syrup
1 tablespoon PB2
2 tablespoons Kashi Honey Sunshine
Wash & chop apple. Place chopped apple in small bowl with lid. Drizzle with caramel syrup. Close bowl with lid. Shake bowl until apple is covered with syrup. Remove lid and sprinkle PB2 over apple. Close bowl with lid and shake again until apple is covered with PB2. Crush Honey Delight cereal in a Ziploc bag. Sprinkle on top of apples. Enjoy!
Megan & I loved this. It is super yummy and a different way to eat an apple that really curbs the sweet craving I was fighting. Make sure to scrape off any caramel peanut butter mix that might stick to the bowl. My thought is that I am counting those calories and I am going to eat them. Ha! This is great as a snack or a dessert.

[...] This is a new cereal from Kashi. I love Kashi products. This is Kashi’s Honey Sunshine. I found this at Super Walmart with the other “health food” cereals. This cereal reminds me a lot of Captain Crunch cereal. I haven’t ate much Captain Crunch in my life but that is the closest comparison I can come up with. The nutritional stats on this cereal is great! Nutritional Information for 3/4 cup: 100 calories, 1.5 grams fat, 6 grams of fiber. I have ate this cereal as a snack, with yogurt and in my Caramel Peanut Butter Apple Delight. [...]

Kristin,
Hey buddy. PB2 is powdered peanuts. The oil isn’t added yet. So that is why it is much lower in fat. You add water to it. Or you can add your daily oil. Or add it dry to different things. If you search by PB2 you will see different ways I have used it.
You can buy it at http://www.bellplantation.com
Bell Plantation also has a search function to see if anyone close sells it.
