Summer BBQ Chicken Salad

On Friday, I mentioned that I went to Paradise Bakery for lunch when we were in Noblesville. I had an awesome salad: BBQ Chop Salad. I knew after eating it that I would want to recreate it. Today for lunch, I took a stab at my version. I have always wanted to photograph my recipes. I figured this was as good as time as ever.

Summer BBQ Chicken Salad

2 cups Romaine lettuce
2 ounces cooked chicken breast, shredded
2 tablespoons chopped red onion
2 tablespoons canned corn, drained
2 tablespoons black beans, drained & rinsed
2 tablespoons BBQ sauce of your choice
2 tablespoons Bolthouse Farms Ranch Dressing

In a small bowl with lid, combine Romaine lettuce & ranch dressing. Shake until lettuce is covered. Combine chicken & BBQ sauce. Mix well. Place lettuce on plate. Top with chopped red onion, corn, & black beans. Finish the salad with the BBQ chicken. Serve immediately. You can heat the BBQ chicken if you want. I have fixed the salad with cold BBQ chicken & warmed BBQ chicken. I like it both ways. Enjoy!

Nutritional information for entire salad: 202 calories, 11 grams fat, 6 grams fiber

You can easily double or triple this recipe depending on how many people you need to feed!

    YUM! This looks delicious! Great picture Kristen!!! The recipe sounds really tasty. Will have to give it a try!
