French Toast

Saturday night before bed, I decided to create a new recipe for French Toast. You really can’t deviate too much for French Toast but this is my new recipe. I was happy with how it turned out. If you don’t need to feed as many people, you can easily scale down the recipe. I created the recipe to use the entire loaf of French bread.
Kristen’s French Toast -10 servings
1 Panera Bread’s French bread baguette
1 cup liquid egg substitute (Eggbeaters)
1 cup skim milk
1/8 teaspoon salt
1/2 teaspoon cinnamon
2 tablespoons Splenda
1 teaspoon vanilla
butter flavored cooking spray
Combine liquid egg substitute, skim milk, salt, cinnamon, Splenda, & vanilla in a shallow dish with sides. (I used a pie dish) Slice French baguette in to 30 even slices. Soak each slice for 30 seconds on each side. I only soaked as many as I was going to be able to fit in to a skillet. Preheat a non-stick skillet on medium heat and spray with butter flavored cooking spray. Cook each piece of French toast until golden brown on each side. Serve immediately.
Note: This does not include any maple syrup. I use Log Cabin’s sugar free maple syrup. Nutritional info for syrup: 1/4 cup: 35 calories, 0 fat, 0 fiber
Nutritional information for French Toast (3 slices) 171 calories, 0 fat, 1 fiber or for six slices (large serving) 342 calories , 0 fat, 2 fiber.
Three slices were plenty for me.
Enjoy! If we hadn’t been running late to get to church, I was going to add some fresh blueberries or strawberries on top! Yum.
Additional note: any French bread baguette would work. If you subsitute for a different loaf, you will need to figure nutritional information.
