Shredded Taco Chicken

A few weeks ago, I told you about thisĀ great new recipe that my friend Tammy came up with. She cooks a lot like me and just dumps things in. So when I made it the first time, I just dumped. No measuring. It turned out great. Well, that is a problem becauseĀ I needed exact measurements to be able to post the recipe. So I made it again this week. I was very careful in measuring so I could pass on the recipe. So here it is…..
Shredded Taco Chicken
1 pound cooked shredded boneless skinless chicken (I just boiled my chicken, shredded it & weighed it)
1/4 cup+ 2 Tablespoons Lawry’s Baja Chipotle marinade (see food review)
1 Tablespoon Tastefully Simple Southwest Seasoning (or any similiar seasoning mix i.e.. Pampered Chef)

After the chicken is cooked & shredded, mix in the Southwest Seasoning of your choice. Sprinkle with approximately 4 tablespoons of water or until the seasoning is a little wet. (I hate dry chicken) Add in Lawry’s marinade. Stir until blended. Reheat if needed.
4 servings per recipe: NI for 4 ounces 174 calories/ 2.6 fat/ 0 fiber
Note: I have served this two different ways. The first time was in chicken soft tacos. The second time was on a salad. Both very yummy! Next time I make this, I am going to make more and freeze it. I think it would reheat great. Chris took the leftovers for a sandwich today for his lunch. So the possibilities are endless.
