Grilled Sweet Potatoes

This is a recipe that I came up with in a hurry on July 4th. We were having grilled pork chops and I wanted another side to go with the corn we were having. I made two versions of this because I wanted a much spicier version for Chris & me.

For two servings you need:

1 pound sweet potatoes

baking spray

salt & pepper

1 Tablespoon McCormick’s Grill Mates Garlic & Onion Medley (see food review)

1/2 teaspoon crushed red pepper flakes (optional) more can be used

foil

Wash & peel the sweet potato. Slice in to 1/2 in slices. Take a 12 inch piece of foil and spray with baking spray. Lay out the sweet potato slices. Sprinkle with seasonings. Seal up edges of foil to create a sealed tent. Place on grill on medium heat for 10 minutes. Remove and “stir” making sure the potatoes are not sticking. Use additional baking spray if needed. (now is a great time to add any meat on the grill that you want to cook). Continue cooking sweet potatoes until they are fork tender. Serve immediately.

Sydney ate almost an entire packet by herself. She loved them and is already asking for them. It took some convincing to try them in the beginning but once she did she loved them. Chris & I really liked the spicy version. A great way to use sweet potatoes that isn’t in a sweet recipe!

If you need more than two servings, you can easily make additional packets to grill. On Friday we had two packets. One spicy & one without the crushed red pepper flakes.
