Strawberry Rhubarb Delight

I was given some fresh rhubarb & some great frozen strawberries. Thanks Mom! So I wanted to come up with something for my sister, Kerri & me. We both LOVE anything with rhubarb & strawberries. This isn’t anything really new.

Strawberry Rhubarb Delight

2 1/4 c. chopped rhubarb (about 1 inch pieces)

2 cups whole strawberries (mine were frozen whole)

3/4 cup water (or as much as needed)

1 t. sugar free strawberry gelatin powder

1 cup Splenda

Place all ingredients in a pan. Cook on low until the strawberries & rhubarb break down as far as you would like. My strawberries had some ice on them so I didn’t need as much water.  You might need more or less water depending on how thick you would like your mixture.

Six servings. NI for one serving 45/.25/1.92

There are so many different things you can use this yummy concoction for. I ate some just plain when it was warm. I put a little on top of a pancake. You could use it on some low-fat ice cream. Top some oatmeal. Put it on some toast as some jam.

Mine wasn’t super thick which was fine for me. Enjoy!
