Spicy Broccoli & Cheese Soup

My Mom made this recipe over the weekend. Yummy! Super yummy. Wow. It packs a spicy punch to it.

Spicy Broccoli & Cheese Soup

2 pounds frozen broccoli

29 ounces fat free chicken broth, reduced sodium

1 can chopped tomatoes with green chilies

10 ounces Light Velveeta

1/2 t. black pepper

1/2 t. garlic powder

1/2 c. chopped onion

Simmer broccoli, broth, tomatoes, onion & spices for 20 minutes or until broccoli is tender.

Remove from the heat and add Velveeta. Stir until the cheese is melted.

Remove 1/3 of soup and blend in blender until smooth. Return to pot. Stir well.

Note: I was trying to figure out a way to list NI since it is very random how much soup you remove to blend. So I am going to give the NI for the entire recipe. Once you are done blending the soup in the blender, you will need to measure out the amount of soup you have. Then divide the NI by the number of servings.

NI for the entire recipe: 1373/56/30

My mom got 10 servings from her recipe if that gives you any idea.

This soup is very spicy. If you are not a spicy person, I would substitute the tomatoes with green chilies with just diced tomatoes.  Thank Mom for sharing your new recipe find.
