This is the first recipe that I entered in the baking contest. Roni from www.Ronisweigh.com hosted the contest. By far, this was my favorite of the two. You need a baking mix from www.vitalicious.com I love their corn vitatops & their new triple chocolate chunk vitatops. I had never purchased their mixes before this contest. I really liked the mixes. I think next time that I buy the mixes, I will make the muffins in to muffin tops.
Chocolate Zucchini Surprise Muffins
Ingredients
1 package deep chocolate Vitamuffin mix
3 T. semisweet mini chocolate chips
1/4 c. chopped black walnuts (regular walnuts can be used)
1/4 c. liquid egg substitute
1 c. finely shredded zucchini
water (see directions below)
Shredded zucchini to get 1 cup. Place shredded zucchini in measuring cup and fill with water to get 1 1/3 c. total. Mix all ingredients until moistened. Divide batter in to prepared muffin tin. Approximately 12 muffins. Bake 28-34 minutes or until firm. Enjoy!
Nutritional information for one muffin: calories: 134.2, fat: 3.8, Fiber 6 (I haven’t had any luck finding NI for shredded zucchini) I know that it wouldn’t be that many calories, no fat and some fiber.
Unfortunately, I didn’t win the baking contest. My recipes were definitely not creative enough. But that is ok. I am very happy with my muffins.
