Cheesy Chicken Mac & Cheese

A woman that I work with gave me this recipe a few weeks ago. I finally got around to making it. It was super yummy. I made a few alternations to the original recipe. My girls ate this up. (Chris was out of town so I don’t have his opinion) but I did have Kyle, our neighbor, here. Kyle had two helpings so I think it passes the kid’s test.

Cheesy Chicken Mac & Cheese

1 c. dry whole wheat elbow macaroni, cooked & drained

3/4 c. fat free milk

1 can 98% fat free cream of chicken soup

12 ounces boneless skinless chicken breasts, cooked & cubed

4 ounce can of mushrooms

1 cup 2% shredded cheddar cheese

1/2 t. garlic powder (I added)

1/2 t. pepper

Preheat oven to 350 degrees. In bowl, combine soup and milk. Blend. Add in 1/2 c. cheese (keep back 1/2 cup) and remaining ingredients. Place in 2 quart casserole dish that was sprayed with baking spray. Bake 50 minutes and stir. Top with remaining cheese and bake an additional 5 minutes.

8 servings: NI 222.25/4.77/2.81

6 servings: NI 296.33/6.36/3.75

4 servings: NI: 444.5/9.54/5.63

Kristen’s note: This is another prime example of why you always always always need to re-figure points. This was given to me at 6 points for 4 servings. That isn’t right at all. Wish it was but I would rather know ahead of time. I also think I would reduce the milk to 1/2 c. so it is a little thicker. Next time I will add more garlic powder. Overall this was a great recipe!
