Mexican Skillet Pork Supper

This supper is so yummy. I made it for my family after Christmas. It was greatly exceeded my expectations. So enjoy!

Mexican Skillet Pork Supper

1 pound pork tenderloin, trimmed of any fat

2 T. taco seasoning

cooking spray

1 1/2 c. frozen corn

15 oz can black beans, rinsed and drained

1/2 c. salsa

1/2 c. water

1/2 c. sliced green onions

Cut pieces of pork crosswise in to 8 pieces.Between two pieces of plastic wrap, flatten pork pieces in to thin medallions Sprinkle pork with 4 t of taco seasoning. Heat skillet over medium-high heat. Lightly coat skilled with cooking spray. Add pork. Cook one one side for 2 minutes or until no longer pink and are nicely browned. Turn and cook on other side. After pork is cooked completely through remove from pan & keep warm. Add corn, beans, salsa, water and remaining 2 t. taco seasoning to pan and mix well. Cook on medium heat for 3 minutes or until heated thoroughly. Add pork back to skillet and heat to desired temp. Top with green onions and serve.
