Taco Stuffed Pasta Shells

This is a yummy new recipe that we had on Monday night for supper. It was a different twist to have pasta with the taco filling. Very good and will go in to the rotations.

Taco Stuffed Pasta Shells

15 jumbo dried pasta shells, cooked according to directions on box

1 pound extra lean ground beef, browned & drained

16 ounce can of fat free refried beans

2 cups salsa

1/4 c. sliced green onions

1 cup water

1 cup reduced fat (2%) shredded cheddar cheese

1 package reduced sodium taco seasoning

reduced fat sour cream, optional (not included in nutritional information)

Preheat over to 350 degrees. Combine cooked ground beef, taco seasoning,  refried beans and water and 3/4 cup of cheese. Mix completely.

Spread 1/4 cup salsa in the bottom of baking dish. stuff pasta shells with meat & bean mixture Place stuffed shells, open side up, on top of salsa. Top each stuffed shell with remaining salsa.  Cover dish with foil.  Bake for 40-45 minutes.  Remove from oven, sprinkle with remaining cheese & sliced green onions.

Nutritional information for 3 stuffed shells: 391/15/3

Note: I had quite a bit of leftover filling. I stuffed the shells as much as I could and still could have stuffed at least 3 more shells. The recipe noted that this freezes well. I would suggest freezing the filling and not freezing the stuffed shells because they were tearing. Just my suggestion.

    I just recently began ww for the 2nd time. I have made this recipe a few times. My family loves it!
