Cheeseburger Surprise

I tweaked a recipe to come up with this. I was very happy with how it turned out.

Cheeseburger Surprise

3/4 pound super lean ground beef

5 pieces of turkey bacon

1/2 cup chopped onion

1 cup finely chopped zucchini

4 ounces light Velveeta

1 tube reduced fat crescent rolls

Cooking spray

Brown ground beef & onion until cooked through. Drain off any fat. Crisp bacon in separate pan. Crumble when cooked.

Saute chopped zucchini in small pan sprayed with cooking spray. Combine ground beef, onions, bacon, zucchini & Velveeta in pan and warm on low until Velveeta is melted through.  Meanwhile, unroll crescent rolls on a baking sheet lightly sprayed. Press seams together of rolls to create a rectangle. (Do not press too hard because you are going to roll up the entire thing) After Velveeta is melted and entire mixture is stirred well, put the mixture in the center of the crescent rolls. Roll up the entire thing like a jelly roll. Press any seams together. Bake at 400 degrees for 20-25 minutes or until golden brown. Cut into slices when done. Serves six.

Note: On the “original” recipe, I added the onion, reduced the ground beef, increased the bacon, and added the zucchini. I wanted to get more veggies in this recipe. No one could tell. Kerri, my sister, really liked it. Both girls ate it fine. I was very happy with how it turned out.  I will be making this again!
