Crockpot Buffalo Chicken Soup

Filed under Dinner, Soups by kristen at 7:24 am on Jan 28 2008

This is a recipe that my Mom made this weekend. She brought me some over to try. It was so good that I just had to pass on the recipe.

Crockpot Buffalo Chicken Soup

1 1/2 pounds frozen chicken breasts

48 ounce jar of Great Northern beans, rinsed & drained

1 c. chopped carrot

1 c chopped onion

1 c. chopped green onion

1 1/2 c chopped celery

5 cloves garlic, minced

1 t. chili powder

1 t. paprika

3 cups fat free chicken broth

28 ounces stewed tomatoes

1/4 cup to 1/2 cup hot sauce (I prefer hotter so I would use 1/2 cup or maybe more)

16 ounces frozen corn

salt & pepper to taste

In your crockpot, lay the frozen chicken breasts. Top with remaining ingredients and do not stir. Cook on low for 6-8 hours. Remove chicken and shred. Add chicken back to the soup
