Taste of Summer Salad

OK. I will admit that I am totally in love with this salad. I have had is several times this week and am planning on having it again today for lunch. I saw a recipe that had a similar idea but it was for a wrap. So I played around with the amounts and left out the wrap so it could be a bigger meal and this is what I came up with. I had a friend over yesterday and she thought that it was great. It is a great taste of summer: coleslaw & BBQ chicken. Yummy! Plus I think the broccoli slaw is so much more satisfying that a lettuce because there is more substance to it and you have to chew it more.
Taste of Summer Salad
6 ounces broccoli slaw mix (check your NI on the bag. Mine was 0 points for 2 servings)
2 ounces of cooked shredded chicken breast, warm
2 T light coleslaw dressing
1 T BBQ sauce
In a bowl, combine broccoli slaw mix with coleslaw dressing. Toss to coat completely. Combine warm chicken with BBQ sauce. Mix well. Top slaw with chicken. Enjoy!
Just typing this is making me hungry. This salad serves 1 person. This could easily be made in to a large salad for more people. Just multiple depending on how many people you want to feed.
This is a perfect example of why you need to check your own point values for recipes. This recipe point value could easily change depending on the brand of broccoli slaw, BBQ sauce, & light coleslaw dressing.
