Strawberry Rhubarb Steel Cut Oatmeal

As you can probably tell by now, I am on a steel cut oatmeal kick. They fill me up and are something new in my rotation. I love rhubarb so I wanted to come up with a recipe for my sister, Kerri & me. Strawberry rhubarb is one of our favorites.

Kristen’s Strawberry Rhubarb Steel Cut Oatmeal

2 cups steel cut oats

3 cups  rhubarb (I used some that I had frozen & put them in frozen)

2 cups strawberries (I used frozen and put them in frozen)

5 cups water

1 cup skim milk

3/4 cup Splenda

Combine all ingredients in crock pot and cook on low for 3-4 hours or until oats are done.

Serving size 1 cup

8 Servings per batch.

Note: I like my strawberry rhubarb recipes on the tart side. So if you like sweeter, add more Splenda and adjust your points accordingly! Enjoy.
