Seven Layer Salad

I made this salad for Christmas. It is a family favorite but I changed a few things to make it more Weight Watcher friendly. I apologize in advance that I do not have the serving sizes. But I just made this again today. Once I mix it up, I will measure out how much it makes. It is huge. I estimated that it is 15 servings but I am guessing it is more like 20.

7 Layer Salad

20 ounces shredded lettuce

1 head of cauliflower (5 cups)

1 cup chopped red onion

16 ounces frozen peas, do not thaw

2 1/2 c fat free Miracle Whip

3 T Splenda

2 cups fat free shredded cheddar cheese

9 slices of turkey bacon, cooked crisp

In a large bowl, layer lettuce, cauliflower, peas & onion. Mix Miracle Whip, Splenda & cheese together. Spread on top of salad. Top with chopped bacon. Cover & refrigerate for several hours or overnight.

Note from 12/29/07: I just made this recipe again. It makes 16 cups total. 1 cup of salad. Enjoy!
