Butternut Squash Fries

OK. I will admit that I would have never thought of this in a million years. Who would have thought to cut up a butternut squash and bake them like french fries? In all honesty, I don’t remember ever eating a butternut squash but since my Grandma Wenger used to grow them, I am sure that at some point in my life I have. There really isn’t much to this recipe.

  • 1 butternut squash

Salt (kosher salt if you have it)

Peel the squash. Be very careful. This isn’t any easy chore. You might even earn an activity point while you are peeling! Once you have the squash peeled, you need to clean out all of the seeds & junk. Now you just cut it up in to fry like shapes or however you want it cut up. I usually cut mine in slices & the the circle slices in half. Spray your baking sheets with some Pam. Spread them out on the sheets, sprinkle lightly with salt.  Bake at 425 degrees for approx. 30 minutes. There is no solid answer to this part. The time depends on how think your slices are. (I find the thinner the slice the better) I turned mine every 10 minutes or so. They will shrink up a lot because of how much water is in the squash. Just keep an eye on them make sure that they don’t burn. The edges will get browned.

So yummy! I could make myself sick on these.

1 cup is 1 point! Both of my girls liked them. Megan begged for more. Sydney likes to dunk hers in ketsup. There are so good that I have made them twice in 4 days. Now, I just have to figure out how long the growing season is for butternut squash. I am hoping that I just didn’t discover something to find out that I will have to wait until next fall to have any more!
