Grandma’s Chickenetti

This is my Grandma’s famous recipe. Everyone loves it. My dear friend Debbie asked me to email it to her this week. I figured if I was going to type it up, I might as well post it. I have adapted it to make it WW friendly. It makes a huge casserole so I was happy to see how low the points were!

Chickenetti

10 Servings
1/2 t. pepper
8 oz whole wheat spaghetti, cooked
3 1/2 c. cooked, chopped chicken
1/4 c green pepper chopped
3/4 lb LIGHT 2% Velveeta
1/4 c. chopped pimiento (optional/does add pretty color)
2 cans FF cream of mushroom soup
1 cup FF chicken broth (make note that I reduced this from 1 can)
1/4 t. celery seed
1 onion finely chopped
9×13 sprayed pan
Divide cheese into two amounts. one larger & one smaller amount. set aside smaller amount. melt larger amount in microwave w/ small amount of milk. Combine rest of ingredients. Bake at 350 degrees 1 hour. With 10 minutes left, melt remaining cheese w/ small amount of milk. Pour on top of casserole then sprinkle w/ pepper. Let set a few minutes for cheese to set up.
Can be divided and baked in two 8×8 pans. Freeze great raw!  If baked in smaller amounts bake for 35-40 minutes.
