Mock Guacamole

I am so excited to be able to finally post this. I think I got the recipe just right. We all know that guacamole is awesome but it can be a killer because of the high point value. A discussion at my house on Monday night, started my creative juices flowing. So after eating more guacamole than I should have, I decided to see what I could come up with. So here it is. Try it out & let me know what you think! Chris even liked it. Serve it with a 2 points of baked scoops & you have a tasty 4 point treat! No guilt with this side dish!
Kristen’s Mock Guacamole
3 c. frozen peas
4 T. light sour cream
2 packages of Concord Food’s guacamole mix (this is found in the produce department at Walmart. Just make sure you don’t buy the spicy version)
Cook the peas in boiling water until just done. Rinse & cool in cold water. In a mini-food prep food processor, lightly puree the peas until they are a creamy consistency. Add in the sour cream & seasoning mix and blend well. Chill for 1 hour or until cold throughout.
Four 1/2 c servings Now beat that real guacamole.
